Breads

The Keto Bread


Ingredients - 6 servings

· 1¼ cups almond flour

· 5 tablespoons ground psyllium husk powder

· 2 teaspoons baking powder

· 1 teaspoon sea salt

· 2 teaspoons cider vinegar

· 1 cup boiling water

· 3 egg whites

· 2 tablespoons sesame seeds (optional)


Instructions

1. Preheat the oven to 350°F (175°C). Mix the dry ingredients in a large bowl.

2. Bring the water to a boil and add it, the vinegar and egg whites to the bowl, while beating with a hand mixer for about 30 seconds. Don't over mix the dough, the consistency should resemble Play-Doh.

3. Moisten hands and make 6 pieces of the dough. Place on a greased baking sheet.

4. Bake on lower rack in the oven for 50–60 minutes, depending on the size of your bread. They're done when you hear a hollow sound when tapping the bottom of the bun.

5. Serve with butter and toppings of your choice.


Keto Naan Bread With Melted Garlic Butter


Ingredients - 8 servings

· ¾ cup coconut flour

· 2 tablespoons ground psyllium husk powder

· ½ teaspoon baking powder

· 1 teaspoon salt

· 1⁄3 cup melted coconut oil

· 2 cups boiling water

· coconut oil, for frying

· sea salt

Garlic butter

· 4 oz. butter

· 2 garlic cloves, minced


Instructions

1. Mix all dry ingredients in a bowl. Add oil and then boiling water and stir thoroughly.

2. Allow to rise for five minutes. The dough will turn firm fairly quickly, but stay flexible. It should resemble the consistency of Play-Doh. If you find it’s too runny then add more psyllium husk until it feels right. The amount needed may vary depending on what brand of husk or coconut flour you use.

3. Divide into 6 or 8 pieces and form into balls that you flatten with your hands directly on parchment paper or on the kitchen counter.

4. Fry rounds in coconut oil over medium heat until the Naan turn a nice golden color.

5. Heat the oven to 140°F (70°C) and keep the bread warm while you make more.

6. Melt the butter and stir in the freshly squeezed garlic. Apply the melted butter on the bread pieces using a brush and sprinkle flaked salt on top.


Keto Garlic Bread


Ingredients - 20 servings

Bread

· 1¼ cups almond flour

· 5 tablespoons ground psyllium husk powder

· 2 teaspoons baking powder

· 1 teaspoon sea salt

· 2 teaspoons cider vinegar or white wine vinegar

· 1 cup boiling water

· 3 egg whites

Garlic butter

· 4 oz. butter, at room temperature

· 1 garlic clove, minced

· 2 tablespoons fresh parsley, finely chopped

· ½ teaspoon salt


Instructions

1. Preheat the oven to 350°F (175°C). Mix the dry ingredients in a bowl.

2. Bring the water to a boil and add this, the vinegar and egg whites to the bowl, while whisking with a hand mixer for about 30 seconds. Don't overmix the dough, the consistency should resemble Play-Doh.

3. Form with moist hands into 10 pieces and roll into hot dog buns. Make sure to leave enough space between them on the baking sheet to double in size.

4. Bake on lower rack in oven for 40-50 minutes, they're done when you can hear a hollow sound when tapping the bottom of the bun.

5. Make the garlic butter while the bread is baking. Mix all the ingredients together and put in the fridge.

6. Take the buns out of the oven when they're done and leave to let cool. Take the garlic butter out of the fridge. When the buns are cooled, cut them in halves, using a serrated knife, and spread garlic butter on each half.

7. Turn your oven up to 425°F (225°C) and bake the garlic bread for 10-15 minutes, until golden brown.

8. Pour the rest of the garlic butter in a bowl and dip pieces of bread in it.


Keto Hot Dog Buns


Ingredients - 10 servings

· 1¼ cups almond flour

· 5 tablespoons ground psyllium husk powder

· 2 teaspoons baking powder

· 1 teaspoon sea salt

· 2 teaspoons cider vinegar or white wine vinegar

· 1¼ cups boiling water

· 3 egg whites


Instructions

Keto Bread Twists


Ingredients - 10 servings

· 8 tablespoons almond flour

· 4 tablespoons coconut flour

· ½ teaspoon salt

· 1 teaspoon baking powder

· 1½ cups shredded cheese, preferably mozzarella

· 22⁄3 oz. butter

· 1 egg

· 2 oz. green pesto

· 1 egg, for brushing the top of the bread twists


Instructions

1. Preheat the oven to 350°F (175°C).

2. Mix all dry ingredients in a bowl.

3. Melt the butter and the cheese together in a pot on low heat. Stir with a wooden fork until the batter is smooth. Crack the egg and stir well.

4. Add the dry ingredients and mix together into a firm dough.

5. Place the dough between two sheets of parchment paper. Use a rolling pin and make a rectangle, about ⅕ inch thick.

6. Remove the upper piece of parchment paper. Spread pesto on top and cut into 1-inch strips. Twist them and place on a baking sheet lined with parchment paper. Brush twists with the whisked egg.

7. Bake in the oven for 15–20 minutes until they’re golden brown.


Keto Parmesan Crouotons


Ingredients - 8 servings

· 1¼ cups almond flour

· 5 tablespoons ground psyllium husk powder

· 2 teaspoons baking powder

· 1 teaspoon sea salt

· 2 teaspoons white wine vinegar or cider vinegar

· 1¼ cups boiling water

· 3 egg whites

Parmesan topping

· 3 oz. butter

· 2 oz. grated parmesan cheese


Instructions

1. Preheat the oven to 350°F (175°C).

2. Mix the dry ingredients in a bowl.

3. Bring the water to a boil. Add boiling water, vinegar and egg whites to the dry ingredients while beating with a hand mixer for about 30 seconds. Don't overmix the dough; the consistency should resemble Play-Doh.

4. Form into 8 flat pieces of dough with moist hands. Remember that you need to allow a lot of room between the pieces as they will swell up to double their size as they are baked.

5. Bake on lower rack of oven for about 40 minutes. Let cool for a few minutes. Split the bread pieces lengthwise and place both halves face up on a sheet pan.

6. Stir together the butter and parmesan cheese and spread on the halved bread. Raise the oven temperature to 450°F (220°C), or better yet, switch oven to a high broil. Pop bread pieces back in the oven for 5 minutes or until they have turned golden brown. Watch continuously to avoid burning the topping.

7. Enjoy whole as a snack, or split into smaller pieces, like in the picture above. Great with your favorite salad!

Keto Garlic & Rosemary Foccacia


Ingredients  - 8 servings 

· 1½ cups shredded mozzarella cheese

· 2 tablespoons cream cheese

· 1 teaspoon white wine vinegar

· 1 egg

· ¾ cup almond flour

· ½ teaspoon salt

· ½ teaspoon garlic powder


Garlic and rosemary butter

· 2 oz. butter at room temperature

· 3 garlic cloves, finely chopped

· ½ teaspoon sea salt

· ½ teaspoon fresh rosemary, chopped


Instructions

1. Preheat the oven to 400°F (200°C).

2. Heat the mozzarella and cream cheese in a small pan on medium heat or in the microwave oven. Stir occasionally.

3. Add the other ingredients and stir thoroughly.

4. Flatten the dough into a round crust, about 8 inches (20 cm) in diameter, on parchment paper.

5. Make holes in the dough with a fork and bake in the oven for about 12 minutes or until the bread has turned a golden color. Remove from the oven and let cool a little.

6. Mix together butter, garlic, salt and rosemary. Spread on top of the bread and place in a round baking dish.

7. Bake for another 10 minutes. Divide into 8–10 pieces and serve lukewarm.


Keto Coconut-Flour Bread


Ingredients  - 12 servings 

· ½ cup coconut flour

· ¼ teaspoon sea salt

· ¼ teaspoon baking soda

· 6 eggs

· ½ cup melted coconut oil


Instructions

1. Preheat the oven to 350°F (175°C).

2. In a medium sized bowl, sift together the dry ingredients.

3. Slowly add the wet ingredients into the dry ingredients and stir until very smooth.

4. Grease a small bread pan and fill about ⅔ of the way full with batter. Bake for 40-50 minutes, or until a toothpick comes out clean.


Keto English Muffins


Ingredients

· 2 eggs

· 2 tablespoons coconut flour

· ½ teaspoon baking powder

· 1 pinch salt

· 3 tablespoons butter or coconut oil, for frying


Instructions  - 3 servings 

1. Mix together coconut flour, baking powder and a pinch of salt in a bowl.

2. Crack the eggs into the bowl and whisk together. Let sit for a few minutes.

3. Place three dollops of the batter in a frying pan with melted butter, on medium high.

4. Turn the breads after a couple of minutes and fry some more.

5. Serve with butter and your favorite toppings
